Catalunya, Spain grape A blend of Macabeo, Xarel.lo and Parellada vinification Freixenet produces its sparkling wines in the traditional méthode champenoise, aging Carta Nevada Brut for nine months in the 'cavas,' the caves from which they take their name. Embracing double fermentation, the second fermentation takes place in the bottle as the wine ages on the lees. Through the process, Freixenet sets the stage for a generous mousse and continuous stream of fine bubbles upon opening. aging Aged 10-18 months palate Carta Nevada Brut has dosage, or residual sugar level, of 1.5%. Its fresh, fruity flavor is pleasant and slightly sweet, although still within the technical range of the brut category. This wine's refreshing, light taste leads from a full, ripe peach, apricot fruit and vanilla nose, encouraging big, round, soft flavors in the mouth, with an appealing finish.
